Green Garlic Chutney

This dish is a beautiful amalgamation of delicious coriander and spicy garlic made into a chutney that makes great accompaniment for idly, dosa, and rice as well. Green garlic, as we all know, is an immature garlic plant, which is harvested before it reaches maturity and is used as an early-season substitute for garlic. Taste wise, it is similar to the commonly available garlic but without much of spiciness.

This recipe is the easiest to prepare. All you need to do is, combine all the ingredients and blend.

Ingredients

1-inch ginger piece - chopped

4-5 green chilis – chopped

1 bunch green garlic with stalks - chopped

¼ cup fresh coriander leaves - chopped

½ tsp red chili powder

1 tsp sugar

½ tsp black salt

1 tbsp lemon juice

salt to taste

How To Make Green Garlic Chutney

  • Add ginger, green chilies and green garlic in a mixer and grind these together.
  • Add coriander leaves, red chili powder, sugar, black salt, and lemon juice and grind it to a fine paste.
    • Note: Add a little water if the consistency is too thick.
  • Add salt and mix well.
  • Transfer into a serving bowl and serve.
