Eggs Neptune

Eggs Neptune is a breakfast special for Mother’s and Father’s Days. It is a variation of the dish Eggs Benedict and replaces its ingredient of Canadian bacon with Crab meat. It can be your special breakfast-in-bed treat for your loving parents and it is very easy to make!

Ingredients

english muffins: 4

crab meat: 200 gm

Eggs: 4

Melted butter: 2 slabs

egg yolks: 3

white vinegar: 2 tbsp

lemon: 1

cayenne pepper – to taste

salt to taste

Water as needed

Butter: 1/2 slab

Freshly ground black pepper to taste

red pepper flakes to taste

How To Make Eggs Neptune

For Hollandaise Sauce

  1. Place a sauce pan on the stove on low flame filled with an inch of water.
  2. Take a mixing bowl.
  3. Make sure the mixing bowl can fit on top of the sauce pan that you have placed on the stove.
  4. Add egg yolks and fresh lemon juice squeezed from the lemon into the bowl.
  5. Place the bowl on top of the sauce pan and whisk the eggs and lemon thoroughly.
  6. Start adding melted butter into the bowl while whisking it on the heat.
  7. Add butter gradually as you continue to whisk the sauce.
  8. Once you get the sauce to a thin consistency season it with salt and cayenne pepper.
  9. Whisk it some more and set it aside until it is needed for assembling.

For Poached Eggs

  1. Place another larger pan on another stove and fill up half of it with simmering boiling water.
  2. Break open an egg in a separate bowl.
  3. Add white vinegar into the water and let it simmer for a few minutes.
  4. Add eggs into the water.
  5. Repeat the same process with the rest of the 3 eggs.
  6. Let the eggs cook for at least 3 to 4 minutes then remove them from the pan and set them aside until they are needed for assembling.

For the Muffins and the Crab Meat

  1. Take a non-stick frying pan.
  2. Add butter into it.
  3. Add thoroughly washed and cleaned crab meat into the pan.
  4. Fry it at low heat for a couple of minutes.
  5. Season the meat with salt, freshly ground black pepper and red pepper flakes.
  6. Fry it until it is tender, at least for 25 to 30 minutes.
  7. Remove it from the pan and set it aside until it is needed for assembling.
  8. Add the English muffins into the pan and brown both of its sides for a couple of minutes each.
  9. Remove the muffins from the pan and set them aside until they are needed for assembling.

For Assembling

  1. Pull out a serving dish.
  2. Place all of the four muffins on it.
  3. Place a poached egg each on top of each of the muffins.
  4. Ladle hollandaise sauce on top of each of the poached eggs and muffins.
  5. Enjoy the Eggs Neptune hot!

  • The word ‘breakfast’ literally means breaking the fasting of the previous night.
