Ingredients

vegetable oil: 2 tbsp

medium onion – chopped fine: 1

medium tomato – chopped fine: 2

green chilli peppers – slit lengthwise: 3

ginger and garlic paste: 2 tsp

Red chili Powder: 1 tsp

Turmeric powder: 1/2 tsp

eggs whisked lightly: 4

salt

butter--divided: 2 tsp

coriander leaves – chopped and divided: 1/4 cup

How To Make Eggs Bhurji

  1. Add green chilies and tomato. Stir well for a minute, and add red chili powder and turmeric powder. Continue stirring till oil starts separating from the paste. Be careful not to burn the paste.
  2. Reduce the heat to a low, add the whisked eggs and salt, and gently stir till the mixture starts curdling.
  3. Turn the flame back to high while vigorously continuing to stir the mixture around.
  4. Add 1 tsp butter as you stir and let it melt into the egg mix.
  5. Toss in half of the chopped coriander and stir.
  6. Turn the heat off, garnish with rest of the coriander and a dollop of butter on top, and serve immediately!
