Ingredients

eggs – boiled: 4

tsp ginger garlic paste: 1

tsp red chilli powder: 1

tsp turmeric powder: 1/2

tsp salt: 1/2

tsp cumin powder: 1

tsp coriander powder: 1

tsp cumin seeds: 1

green chilli: 1

finely chopped onion: 1

tsp ginger – chopped finely: 1

tsp garlic—finely chopped: 1

tsp turmeric powder: 1

tsp coriander powder: 1

tsp cumin powder: 1

tsp red chilli powder: 1

tsp salt: 1

cup water: 1/2

tomatoes: 2

cup water: 1/2

tbsp coriander leaves: 3

tsp hing: 1/8

tsp methi seeds: 1/4

tsp mustard seeds: 1

kashmir chilli: 1

curry leaves: 8-10

tsp Kashmiri chilli powder: 1

How To Make Egg Masala

  1. Place boiled eggs in a bowl.
    1. Add ginger-garlic paste, red chilli powder, turmeric powder, salt, cumin powder and coriander powder.
    2. Mix the spices thoroughly.
    3. Heat oil in a pan and sauté the mixture.

Prepare Curry

  1. Add cumin seeds, green chilli and chopped onion to a pan.
    1. Sauté them till they turn a golden brown color.
    2. Add ginger, garlic, turmeric powder, coriander powder, cumin powder, red chilli powder and salt.
    3. Mix them well.
    4. Add water and let it simmer.
  2. Add tomatoes, mix well and add more water.
    1. Mix them thoroughly.
  3. Grind the mixture to get the perfect mix of spicy gravy.
  4. Put the eggs into the gravy and mix.
  5. Add coriander leaves and mix.
  6. Let simmer. 

Prepare Tadka

  1. Put hing, methi seeds, mustard seeds, Kashmiri chilli, curry leaves and Kashmiri chilli powder in a pan.
    1. Sauté well.
  2. Pour it over the curry along with coriander leaves and mix well.
  3. Serve and enjoy!
