These easy marinated vegetables probably make for one of the easiest and simplest vegetarian dishes out there. It takes an extremely short amount of time to prepare the vegetables and doesn’t require many ingredients outside of the vegetables themselves and water. This dish is nothing but healthiness. It may not be enough to stand on its own however, and might work best as an appetizer or side dish. Be sure to have your favorite salad dressing on hand.

They also have vitamin A, vitamin C, vitamin E, vitamin K, and vitamin B1, as well as iron, zinc, calcium, magnesium, sodium, and potassium.

Ingredients

cups broccoli florets: 1 1/2

cups cauliflower florets: 1 1/2

green bell pepper – cut into 1-inch pieces: 1

cucumber - peeled, seeded, and chopped: 1

carrot – coarsely chopped: 1

cup Italian style salad dressing: 1/4

How To Make Easy Marinated Vegetables

  • In a large pot, boil salted water.
  • Add the broccoli and cauliflower florets to the boiling water and let sit for 1min.
  • Drain the water and rinse the part boiled florets.
  • Combine the broccoli, cauliflower, bell pepper, cucumber, carrot, and salad dressing in a medium size mixing bowl.
  • Cover the bowl and refrigerate the vegetables for one hour.
  • Serve and enjoy!

Trivia

If you include cucumbers in your vegetable marinade, you're actually including a fruit.
