Cucumber Salad

Cucumber salad is a classic salad dish, right up there with Caesar salads and Cobb salads. The cucumbers are great to eat because they’re filling without having many carbs. They also have a heavy water content so they help you feel satiated longer which will help you avoid snacking on unhealthy foods like chips and cookies. This salad makes for a great snack or appetizer; not only are the cucumbers bite sized, but they’re also refreshing, so you should be sure to save this salad for a hot day.

Ingredients

medium cucumbers – thinly sliced

cup cider or white vinegar: 1/3

cup water: 1/3

tbsp sugar: 1/4

tsp salt: 1/2

tsp pepper: 1/8

Chopped fresh dill weed or parsley to taste

How To Make Cucumber Salad

  1. Place cucumbers in small glass or plastic bowl.
  2. In a tightly covered container, shake remaining ingredients except dill weed.
    1. Pour mixture over cucumbers.
  3. Cover and refrigerate at least 3 hours to blend flavors.
  4. Drain cucumbers.
    1. Sprinkle with dill weed.
  5. Store covered in refrigerator until you’re ready to serve. 

Trivia

A slice of cucumber can act as a breath mint if you hold it to the roof of your mouth for 30 seconds. The phytochemicals inside it kill the bacteria responsible for halitosis.
