Ingredients

kg shelled crab –fresh or freshly cooked: 1.5 - 1.75

tbsp groundnut or vegetable oil: 2

tbsp garlic – finely sliced: 3

tbsp fresh ginger – finely shredded: 2-3

whole spring onions – sliced: 6

Salt and freshly ground black pepper

tbsp Shaoxing rice wine: 3

How To Make Crab Onion Fry

  1. Clean and cook the crab.
  2. Quarter the crab body with a large knife or cleaver.
  3. Crack the claws and legs with the flat of the cleaver.
  4. Heat a wok over high heat until it is hot.
    1. Swirl in the oil, and when it is very hot and slightly smoking.
    2. Toss in the garlic, ginger and spring onions and stir-fry for 20 seconds.
  5. Toss in the crab pieces, salt, pepper, and rice wine.
    1. Stir-fry over a high heat for about 15 minutes.
  6. Serve and enjoy!
