chicken breasts - diced: 2

lime - juiced: 1/2

yellow onion - diced: 2

extra virgin olive oil: 2 tbsp

ginger - grated: 2 tbsp

garam masala: 2 tsp

garlic cloves - finely chopped: 2

full - fat organic coconut milk: 1 cup

tomato paste: 4 tbsp

curry powder: 1 tbsp

paprika: 2 tsp

water: 1/4 cup

cauliflower: 1 head

chili powder: 1 tbsp

sea salt: 1 tsp

How To Make Creamy Butter Chicken with Cauliflower Rice

  • Set the diced chicken aside. In a large skillet, heat the olive oil. Keep the flame at medium strength.
  • Sauté the garlic cloves, onion, and ginger. Add in the paprika, tomato paste, garam masala, curry, chili powder, and sea salt. Cook until a nice aroma arises. This should take about 1 to 2 minutes.
  • Introduce the chicken and stir well. Cook for 5-7 minutes until it is done. Add water. Proceed to loosen the paste at this stage and add coconut milk. Stir and simmer for 5 minutes.
  • Add cauliflower florets to the food processor to make cauliflower rice. Process for some time until you get the desired consistency.
  • Sprinkle lime juice on the cauliflower rice and shift them to a bowl. Remove the chicken from the heat and ladle over the rice. Serve hot.

If you are vegan, you might want to replace the chicken with lentils, beans or chickpeas. You can also add more vegetables including sweet potatoes, broccoli, peas, and chopped cauliflower if you like.
