Ingredients

cup chopped onions: 1

Butter: 2 tbsp

medium potatoes, peeled and cubed: 3

cups chicken broth: 1 1/2

chicken bouillon cubes: 2

cups packed fresh spinach leaves: 2

salt: 1/2 tsp

pepper: 1/8 tsp

cup sour cream: 3/4

How To Make Cream Of Spinach Soup

  1. Cook the onions and butter in a large saucepan on medium heat for about 3 minutes or until the onions are translucent.
  2. Add the potatoes, chicken broth and bouillon cubes. Bring to a boil.
  3. Reduce the heat, cover and simmer for 15minutes or until the potatoes are tender and can be pierced with a fork.
  4. Add the spinach and cook for 3minutes or until tender.
  5. Pour the soup mixture in batches into the blender and blend until smooth.
  6. Pour back in the saucepan and season with salt and pepper. Whisk in the sour cream.
  7. The soup can be served either hot or cold depending on your preference.
