Cheesy Italian Frittata

Italian Frittata is extremely easy and fast to prepare. But most important of all it is customizable and you can substitute any ingredient with what you have at hand.  It’s actually quite fun and creative to prepare Italian frittata since there are no rules to it.

This dish also takes great care of all the leftovers from the night before.

There’s no end to the versatility of Italian Frittata and can be served for breakfast, lunch or even dinner.

Ingredients

medium onion--choped: 1

cup diced boneless chicken (or beef or meat): 1

cup milk: 1/4

tsp salt: 1/4

medium plum tomatoes (sliced): 2

tbsp olive oil: 1

medium zucchini (halved lengthwise and cut into 1/4-inch thick slices): 1

Eggs: 6

tsp Italian seasoning: 1

tsp freshly grounded black pepper: 1/4

cup Mozzarella cheese – shredded: 1

How To Make Cheesy Italian Frittata

  1. Begin by heating oil in a large non-stick pan on medium flame.
  2. When the oil has heated, add onion and zucchini and sauté them for 2 minutes or until the onion is fragrant and zucchini soft.
  3. Add diced meat pieces in the pan and cook for 2 more minutes.
  4. In a different bowl, beat eggs and season it with Italian seasoning, salt and pepper. When the eggs are foamy, pour into the skillet.
  5. Let the eggs cook without stirring for 5 minutes, or until the eggs are firm and set on bottom.
  6. On top of the eggs, spread sliced tomatoes and cheese.
  7. Cover and broil the eggs on low flame for 4-5 minutes or until the eggs are cooked and the cheese is slightly brown.
  8. Sprinkle with a pinch of Italian seasoning and serve.
