The dish is heavy in calories and amount of fat in each serving and is not suitable for consumption in huge amounts. Ingredients
mayonnaise: 1/2 cup
sour cream: 1/2 cup
cider vinegar: 2 tbsp
buttermilk: 1 cup
garlic cloves: 2
green onions (finely chopped): 2
Parsley: 2 tbsp
onion powder: 1 tsp
salt: 1 tsp
pepper: 1 tsp
elbow macaroni: 2 lbs
mustard: 1/4 cup
sour cream: 2 cups
buttermilk dressing: 1 cup
relish: 3/4 cup
fresh thyme (finely chopped): 1 tbsp
celery--chopped: 2 cups
Cheddar cheese (grated): 1 lb
Salt and pepper to taste
How To Make Cheddar Macaroni Salad for a Crowd
Buttermilk Dressing
- In a clean bow whisk together mayonnaise and sour cream.
- Add vinegar, buttermilk and garlic and whisk until creamy and smooth.
- Add onion, parsley, salt, pepper and onion powder and mix well.
- Put aside in fridge for later.
Macaroni Salad
- Fill a large pot with water, add salt and bring to a boil.
- Add pasta to the pot and cook for 10 minutes, or until al dente.
- Drain the cooked pasta in a colander and rinse with cold water and let it strain completely.
- In a large mixing bowl add mustard, mayonnaise, buttermilk dressing, sour cream, relish and thyme. Whisk together until combined.
- Fold in macaroni, cheddar cheese, relish, salt and pepper and gently fold with a wooden spoon.
- Transfer to a serving bowl, garnish with fresh thyme and serve.
