Black Bean Cakes

Spicy black bean cakes are rich and creamy on the inside and crunchier on the outside. The cake is flavorful and makes a great side to the vegetarian green salad.

If you have black beans handy, this is one dish that can be rustled up quickly with all the ingredients you have in your kitchen. Serve it with a creamy avocado dip or a sour dip and your kids will love this version of beans masked in golden crust.

Ingredients

1 can (15 oz)Black Beans (cooked, canned and rinsed)

cup corn (Frozen Kernel): 1

cup shredded cheddar cheese: 1/2

cup bread crumbs: 1

cup cilantro: 1/4

tsp onion powder: 1/2

tsp garlic powder: 1/2

egg: 1

salt to taste

freshly ground black pepper powder

tbsp vegetable oil: 1

How To Make Black Bean Cakes

  • Add black beans, corn, cilantro, shredded cheddar cheese, bread crumbs, onion powder, garlic powder, egg, salt and freshly ground black pepper powder to the food processor.
  • Process to a thick batter.
  • In a non-stick frying pan, add vegetable oil and heat it up on a low flame.
  • Ladle out a tablespoon full of batter to the hot oil in the pan, just like you do for the pan cakes.
  • Cook for at least 3 to 4 minutes on one side or until golden brown and flip to cook the other side.
  • Serve with a creamy dip or a hot sauce.
