Barley Rava Idli

Barley rava idlis make for a great breakfast. Rava idli is popular throughout South India and northern Sri Lanka. The addition of barley to this dish not only makes it tastier, but also exponentially healthier. A main reason why idlis are loved so much is that they are simple and easy to make and they pair well with practically any breakfast condiment. Spread jam, chutney, butter, on your idli or with a side of sambar and enjoy while they’re piping hot.

Barley is high in fiber and perfect for regulating bowel movements and aiding in digestive health. It also has eight essential amino acids which meet the body’s entire protein requirement.

Ingredients

cup sooji: 1/2

cup barley: 1/2

cup curd – whisked: 1/2

tsp enos fruit salt: 1

green chilli – finely chopped: 1

cup water or more if needed: 1/4

tsp mustard seeds: 1

salt to taste

tsp white urad dal – split: 1

tsp chana dal: 1

tsp cooking oil: 1

How To Make Barley Rava Idli

  1. Wash and soak barley in water overnight.
  2. Drain excess water and grind barley to a smooth paste. Tranfer ground barley to bowl.
  3. Heat oil in a pan over and splutter mustard seeds, urad dal, and chana dal. Allow the dal to turn golden brown. This will take a minute or two.
  4. Add chopped chili and sauté for until tender. Follow up semolina and roast for 3-4 minutes.
  5. Turn off the heat and let cool.
  6. In a mixing bowl, combine roasted semolina, barley paste, and curd, barley paste, a splash of water, salt, and a pinch of baking powder. The resulting mixture should be a thick batter that has a slight resistance against gravity, but still flows.
  7. Grease idli plates with a little oil. Drop a ladle full of batter into each of the moulds. Steam covered for 10 minutes.
  8. Insert a toothpick. If it comes out clean, remove the cakes from the moulds and enjoy with your favourite condiments.
