Ingredients

cup Basmati rice: 1

baby corn: 100 -150 g

tbsp oil: 2

tsp cumin seeds: 1/2

in cinnamon: 1

small-medium tejpatta: 1

green cardamoms: 2-3

cloves: 2-3

small star anise: 1

medium onion – finely chopped: 1

tsp turmeric powder: 1/4

tsp red chili powder: 1/4

tsp coriander powder: 1/2

cups water for pressure cooking: 1.5 -2

salt as necessary

tbsp coriander leaves for garnish – chopped: 1-2

How To Make Baby Corn Rice

Prepare the rice

  • Rinse and soak rice for 30 mins.

Prepare the ground paste

  • Place ground paste ingredientsin a small chutney grinder jar.
  • Grind ingredients to a chutney like consistency without adding any water.
  • Set aside.

Prepare baby corn pulao

  • Heat 2 tbsp oil in a pressure cooker.
  • Create the garam masala by adding the following ingredients to the pressure cooker:
    • Cumin seeds, cinnamon, tejpatta, green cardamoms, cloves and 1 small star anise.
    • Sauté till they crackle.
  • Add onions andsauté them until they are golden.
  • Add the ground paste.
    • Stir and sauté for 1 - 2 mins at a low temperature.
  • Add turmeric powder, coriander powder, and red chilli powder,and mix well.
  • Add baby corn.
  • Mix the rice into the rest of the ingredients.
  • Add 1.5 -2 cups water depending on the quality of the rice.
  • Stir very well.
  • Cook the baby corn pulao for 2-3 whistles over a medium temperature.
  • Let the pressure reduce, then fluff the rice with a fork.
