This Aussie lime pie dish is a fun variation on the classic key lime pie. Key lime pie is defined by the use of key limes native to the Florida Keys. So, technically, only a pie made with key limes can be considered a key lime pie. The Aussie lime pie is a worthy substitute however. It is just as sweet and delectable, and even easier to prepare due to the ingredients being more easily available to people outside of America.
Ingredients
cup rolled oats: 2/3
cup flaked coconut: 2/3
cup all-purpose flour: 2/3
cup white sugar: 1/2
cup butter – melted: 1/2
tbsp light corn syrup: 2
tsp baking soda: 1
oz sweetened condensed milk: 14
cup lime juice: 1/2
egg yolks – beaten: 4
tsp lemon zest – grated: 2
How To Make Aussie Lime Pie
- Preheat oven to 350°
- Lightly grease a 9-inch glass pie pan or dish.
- Mix the oats, coconut, flour, and sugar together in a medium bowl.
- To a second bowl, addthe melted butter or margarine, corn syrup, and baking soda together.
- Stir until the mixture becomes frothy.
- Add the corn syrup mixture to the oat mixture and stir until the ingredients are thoroughly combined.
- Evenly press the mixture into the bottom and sides of the pie pan.
- Combine the condensed milk, lime juice, egg yolks, and lemon rind in a medium mixing bowl.
- Beat the mixture for 1 minat medium speed.
- Pour the mixture into the pie crust.
- Bake in a preheated oven for 20 mins until the pie becomes firm in the center.
- Note: Do not allow the pie to become brown on top.
- Chill before serving.
