Ingredients

medium-sized potatoes: 4-5

tablespoon rice flour or corn meal: 1

tablespoons vegetable oil: 2

A pinch of asafetida (optional): 1

tsp cumin seeds: 1

tbsp coriander powder: 2

tsp cumin powder: 1/2

tsp red chili powder: 1/2

tsp turmeric powder: 1/4

tsp salt: 1

tablespoon finely chopped coriander leaves: 1

How To Make Aloo Masala

  1. Boil potatoes until they are perfectly cooked. When cooled enough to handle, peel the skins.
  2. Cut peeled potatoes in quarters.
  3. In a large bowl, mix rice flour and potato pieces until evenly coated.
  4. Heat oil in a large kadai over medium flame. Add asafetida and cumin seeds.
  5. As the seeds splutter, lower the flame. Add coriander powder, cumin powder, red chili powder, turmeric powder, and salt.
  6. Stir well until spice powders are roasted well.
  7. Now add potato chunks and stir gently to coat evenly with the seasonings.
  8. Garnish with finely chopped coriander.
  9. Serve aloo masala with steamed rice, roti, sliced bread or any dal and enjoy!
