Aloo Chokha

Aloo chokha, is basically roasted garlic potatoe, unique to the kitchens of India. Choka refers to a cooking method that involves roasting vegetables and meat with a dry marinade. The sky is the limit when it comes to improvising and adding your own bit to this recipe. You can use leftover vegetables/meat from your fridge or pantry. Zucchini, eggplant, and tomatoes make an excellent addition to this dish. Packing this for your lunch or your kid’s lunch? Potatoes also provide a quick carbohydrate fix and are easily digestion. It is for this reason that boiled and mashed potatoes are one of the first foods introduced to infants.

Ingredients

g potatoes—cut into chunks of width 1 inch: 220

onion—sliced thin: 1

garlic cloves, minced: 3-4

tsp amchur powder: 1

tsp coriander-cumin powder: 1

green chillies, chopped: 2

tbsp chopped coriander: 3

cup whole coriander seeds: 3/4

dry red chillis: 2

Oil for shallow frying

salt to taste

How To Make Aloo Chokha

  1. Heat oil in a skillet and splutter red chilis and coriander seeds. Add onions and stir until translucent. Add green chilies and minced. Let cook until the raw garlic smell disappears.
  2. Add potatoes, stir to combine and let cook until the potatoes turn a light brown.
  3. Add salt, coriander-cumin powder, and 3/4 cup of water. Cover the skillet the contents simmer until the potatoes turn soft. Remove the lid and cook until the water evaporates.
  4. Note: aloo chokha does not have gravy, so ensure that all the water evaporates before you serve the dish.
  5. Add amchur powder stir to combine.
  6. Transfer the aloo choka to a bowl and garnish with cilantro leaves.
  7. Serve and enjoy!
