Ingredients

medium finely sliced zucchini: 6

large chopped onion: 1

finely sliced celery stalks: 2

halved red cherry tomato: 1

halved yellow cherry tomato: 1

chili flakes: 1/4 tsp

olive oil: 1/4 cup

grated parmesan cheese: 1 1/4 cup

penne pasta: 500 g

fresh parsley leaves to serve

salt to taste

Ground black pepper to taste

How To Make Zucchini Pasta Bake

  1. Preheat the oven to 200 degrees C.
  2. Combine zucchini, onion, celery, red chili tomatoes, yellow cherry tomatoes and chili in a large bowl. Add salt, and toss with the olive oil.
  3. Transfer half of the mixture to a large baking dish. Evenly spread it on the dish. Bake it until cooked, for 10 minutes.
  4. Meanwhile, cook penne in a large deep pot of boiling salted water for 10 to 15 minutes. Drain the water.
  5. Transfer half of the pasta to the baking dish. Evenly spread it over the baking dish. Now top it up with the remaining of the mixture, and then gently place remaining of the pasta.
  6. Sprinkle the pasta with the basil leaves and Parmesan cheese.
  7. Bake for 15 to 20 minutes until pasta is crunchy on top.
  8. Serve it with a salad and enjoy!
