Ingredients

large zucchini, thinly sliced: 2

tablespoons olive oil: 2

large onion (diced): 1

cloves garlic, minced: 2

jar spaghetti sauce: 1 (16 ounce)

cup Mozzarella cheese – shredded: 1

How To Make Zucchini Parmesan

  1. Preheat your oven to 165 degrees Celsius or 325 degrees Fahrenheit.
  2. Boil the zucchini in a large pot to the point that it is tender and then drain.
  3. In the meantime, take a medium-sized frying pan and heat olive oil in it over medium heat. Add onion and garlic and sauté until onion is soft.
  4. Take a 9x12 inch casserole dish and combine zucchini, onion, and garlic and mix well.
  5. Next, pour the spaghetti sauce over the mixture and stir thoroughly.
  6. Top with mozzarella cheese as much as you like.
  7. In the preheated oven, bake the dish for about 20 minutes or until properly heated through and the cheese is fizzy.
  8. Sprinkle with parsley, coriander, or a different relish that you prefer and stuff your belly with the delicious dish.

About 30 years back, zucchini was the least popular in the United States. It was initially referred to as green Italian squash. Today, zucchini is not only extremely popular but is also amongst the favorites of gardeners and consumers.

Apart from its fast-growing nature, the popularity is probably due to its versatility! It can be used in so  many dishes.

The word squash which is used to refer to zucchini comes from the Indian languages kuta squash meaning "green thing eaten green”. Although populations of Central and South America are consuming zucchini for thousands of years, Christopher Columbus initially brought seeds to the Mediterranean region and Africa after which the vegetable became popular in these regions too.
