Ingredients

1 large zucchini – thinly sliced into rounds

2 tbsps olive oil

1 tsp kosher salt, or to taste

How To Make Zucchini Chips

  1. Preheat oven to 225°
  2. Line 2 large baking sheets with silicone baking mats or parchment paper.
  3. Place zucchini slices on paper towels in a single layer.
    1. Cover slices with more paper towels.
    2. Gently press on the slices to squeeze out as much liquid as possible.
  4. Arrange the zucchini slices onto the prepared baking sheets,
    1. Make sure the slices do not overlap.
  5. Brush zucchini slices with olive oil and lightly sprinkle them with kosher salt.
  6. Bake zucchini slices in the preheated oven until they turn brown and crispy, about 2 hours.
  7. Let cool before serving.
  8. Store up to 3 days in an airtight container.
