tbsp lime juice — freshly extracted: 1

quarts watermelon — seeded and cubed: 1 1/2

cup red onion — halved and finely sliced: 3/4

cup crumbled feta cheese: 3/4

cup fresh mint — chopped: 1

tbsp olive oil: 2

cup pitted black olives — halved: 1/2

How To Make Watermelon Summer Salad

  • Add onion to a bowl and pour the lime juice. Allow them to stand for some 10-12 minutes so that the acidity balances out the flavors of the onion.
  • Combine the onions and lime juice with the watermelon, feta cheese, mint, and black olives. Sprinkle olive oil over the top and toss the salad.
