Ingredients

watermelon – seeded and chopped: 6 cups

sugar: 5 cups

white wine vinegar or white balsamic vinegar: 1/3 cup

lemon juice: 1/4 cup

red food coloring – optional: 2 - 3 drops

liquid fruit pectin: 6 oz

How To Make Watermelon Jelly

  1. Place watermelon in a food processor.
    • Cover and process the watermelon until it is pureed.
  2. Line a strainer with four layers of cheesecloth and place them over a bowl.
    • Place pureed watermelon in a prepared strainer and cover the edges of the cheesecloth.
    • Let sit for 10 minutes.
  3. Discard watermelon pulp from the cheesecloth.
    • Place the liquid in a large saucepan.
  4. Stir in lemon juice, sugar, vinegar, and food coloring as desired.
    • Bring to a full rolling boil over high heat while constantly stirring.
    • Stir in pectin.
    • Continue to boil 1 minute while stirring constantly.
  5. Remove the mixture from the heat.
  6. Skim off the foam.
  7. Ladle the hot mixture into five hot half-pint jars.
    • Note: Make sure to leave a minimum of 1/4-in. headspace.

  8. Place jars into canner with simmering water.
    • Note: Make sure that they are entirely covered with water.
  9. Bring to a boil for 10 minutes.
  10. Remove jars and let cool.
