Vegetable Samosa

Vegetable samosas are a classic Indian snack. Smaller versions of the standard-sized samosas can also be served as appetizers. Samosas are essentially fried pastries stuffed with tasty filling. This recipe calls for potatoes, peas, and carrots, but feel free to use your own preferred veggies to get the taste that you like.

Carrots are a great source of beta-carotene, a compound that can be difficult to find in a lot of diets. Potatoes are a powerhouse of carbohydrate and potassium. Peas, on the other hand, are rich in protein, vitamins, minerals, and dietary fiber.

Ingredients

cup potatoes – peeled and cubed: 1

tbsp canola oil: 2

small onion (chopped finely): 1

cup frozen peas and carrots: 3/4

tsp garam masala: 1

tsp curry powder: 1/2

kosher salt to taste

sheet frozen puff pastry: 1

How To Make Vegetable Samosa

  1. Remove puff pastry from freezer and let it sit at room temperature for about 40 minutes
  2. Preheat oven to 400 degrees F.
  3. Place potatoes in a medium saucepan over medium-high heat. Add water to immerse the potatoes completely.
  4. Bring to a boil then reduce heat to medium low.
  5. Let simmer 10-15 minutes or until it feels tender when you a run a fork through the potatoes.
  6. Heat oil in a large skillet over medium flame. Saute onion until translucent. Stir in peas, carrots, garam masala, and curry powder and let cook for 3-4 minutes.
  7. Add boiled potatoes and seaon with salt.
  8. Cook for another 2-3 minutes while stirring until the flavors combine.
  9. Remove from heat and let cool until it feels tolerable to the touch.
  10. Place a parchment paper of on a baking sheet. Alternatively, you can grease the surface of the baking sheet with oil or cooking spray.
  11. On a lightly floured surface, unfold puff pastry. Cut into 9 equal rectangles.
  12. Place about 1 tbsp of filling in the center of each rectangle.
  13. Dip the pastry brush in water, so as to wet along the one of the lenghts and breadths of the rectangle.
  14. Fold over like a triangle to seal filling.
  15. Place samosas on prepared baking sheet.
  16. Bake 15 to 20 minutes until golden brown.
