The concept of a vegan chili may sound counter intuitive to some who prefer hearty meaty chilis, but everyone needs a chili recipe, even vegans. Chili is just one of those meals that is all too suitable to make. You really only need one pot and the right set of ingredients, and you can have a chili cooking in a manner of hours. Make sure to flavor this chili to suit your palette; no matter what people say a chili has to taste like you.

Vegan chili cannot be anything but healthy when you consider the general disposition of vegan food in general. It inherently lacks the negative aspects found in animal products like saturated fats. This vegan chili in particular makes heavy use of tomatoes. It has literally 4 cups of tomato puree. Tomatoes help to counter diabetes, stimulate blood circulation, treat urinary tract infections and improve digestion. This wonderful fruit also helps to detoxify the body, reduces inflammation, and even prevents premature signs of aging.

Ingredients

tbsps olive oil: 3

onion chopped: 1

cloves garlic minced: 2

large baking potato peeled and cut into ½ in cubes: 1

cup dry red lentils: 1

cups vegetable broth: 4

oz kidney beans rinsed and drained: 30

oz whole kernel corn: 15.25

cups tomato puree: 4

tbsp ground sweet paprika: 1

tsp spicy chili powder: 1

salt and freshly cracked black pepper to taste

pinch white sugar: 1

bunch fresh chives chopped: 1

How To Make Vegan Chili

  • Heat olive oil in a pot at a medium temperature.
  • Cook onion until it turns soft and translucent.
  • Add garlic and cook until it turns fragrant.
  • Add potato and cook for 3-5 minutes.
  • Stir in lentils.
  • Pour in vegetable broth and let simmer for 20 minutes.
  • Add tomato puree, corn, and kidney beans.
  • Bring pot to a boil.
    • Reduce heat, cover, and let simmer until all of the flavors combine
      • Note: About 10 minutes.
  • Season with sugar, pepper, paprika, chili powder, and salt.
  • Divide chili among 4 bowls and sprinkle with chives.
