cups fresh corn kernels (2 ears): 1 ¼

tbsp minced jalapeño: 2

cup diced yellow squash: 1/2

cup chopped green onions: 1/4

cup chopped fresh basil: 1/4

tsp white wine vinegar: 1 ½

tomato—chopped: 1

Haricots verts trimmed: 450 g

cup finely chopped fresh basil: 1/4

tbsp minced shallots: 2

tbsp fresh lemon juice: 2

tbsp crème fraîche: 2

Honey: 1 tbsp

salt: ½ tsp

pint grape or cherry tomatoes halved: 1

tbsppine nuts, toasted: 1

tbsp olive oil, divided: 5

sherry vinegar: 2 tbsp

freshly ground black pepper, divided: 1/3 tsp

tsp kosher salt, divided: 3/8

cups sliced fresh peaches (2 medium): 1 1/2

broccoli slaw: 340 g

skinless, boneless chicken breasts, cut crosswise into 1-inch strips: 120 g

barbecue sauce: 1/4 cup

chopped fresh chives: 1 tbsp

oz feta cheese, crumbled (about 1/4 cup): 1

center-cut bacon slices, cooked and grounded: 2

  • Combine flour, cornmeal, baking powder, ½ tsp. salt, and ¼ tsp. pepper in a large bowl.
  • Combine sour cream, eggs, and 1 tablespoon oil in a bowl, stirring until smooth.
  • Add sour cream mixture, corn, and jalapeño to flour mixture; stir just until combined.
  • Heat a large nonstick griddle over medium-high heat.
  • Divide corn mixture into 8 equal portions (about 1/3 cup each). Shape into patties.
  • Add patties to griddle; cook 6 minutes on each side.
  • Combine squash, green onions, basil, vinegar, tomato, remaining 1 tbsp. oil, ¼ tsp. salt, and ¼ tsp. pepper in a bowl.

  • Add haricots verts and tomatoes; toss gently to coat.
  • Divide mixture evenly among 6 plates.
  • Sprinkle with nuts.
  • Combine 4 tablespoons oil, vinegar, ¼ tsp. pepper, and ¼ teaspoon salt in a large bowl, stirring with a whisk.
  • Add peaches and slaw to vinegar mixture and toss gently to coat.
  • Sprinkle chicken evenly with remaining pepper and salt.
  • Heat the remaining 1 tbsp. oil in a large nonstick skillet over medium-high flame.
  • Add chicken to pan; cook 6 minutes or until done.
  • Place chicken in a large bowl.
  • Add barbecue sauce to bowl; toss.
  • Divide slaw mixture evenly among 4 plates; top evenly with chicken strips.
  • Sprinkle with chives, feta, and bacon.
