Butter: 2 tbsp

olive oil: 2 tbsp

chopped onions: 2

bunch fresh basil, chopped: 1

pounds plum tomatoes, chopped: 2

• Kosher salt and freshly ground black pepper, to taste

cups chicken stock: 4

cup heavy cream: 1

sprigs basil: 8

How To Make Tomato And Basil Soup

  1. Heat the butter and oil together in a pot over medium heat.
  2. Add the onions and stir until they are tender.
  3. Mixed in the chopped basil and tomatoes.
  4. Add salt and black pepper to season it.
  5. Pour the chicken broth in. Reduce the heat and continue cooking for 15 minutes.
  6. Blend the soup in a blender till it is smooth.
  7. Return to the pot and simmer on low heat.
  8. Stir in the heavy cream and simmer.
  9. Pour in the soup through a sieve.
  10. Serve and garnish with basil sprigs.
