lb well-drained tofu: 1

cup soy mayonnaise: 1/2

tsp Dijon mustard: 2

tsp garlic—finely chopped: 1/4

tsp turmeric powder: 1/8

tbsp parsley—finely chopped: 1

tsp fresh, finely-chopped tarragonor 1/4 tsp dry tarragon: 1

cup celery—diced: 1/2

tbsp scallions—finely chopped: 2

slices of whole-wheat bread: 8

cups grated carrots: 1 1/4

cup clover or alfalfa sprouts: 1

salt to taste

How To Make Tofu Salad Sandwich

  1. In a bowl, crumble tofu using your hands until you get a texture that resemblesmashed eggs.
  2. Add mayonnaise and stir well.
  3. Add in garlic, parsley, salt, turmeric, tarragon, mustard, celery and scallions and stir to combine.
  4. Layer the mixture on 4 slices of bread.
  5. Place carrots and sprouts on the mixture and top with remaining bread.
  6. Cut sandwiches in half and serve.
