Thandai, also known as Sardai, is an Indian cold drink prepared with a mixture of almonds, fennel seeds, Magaztari seeds, rose petals pepper, vetiver seeds, cardamom, saffron milk, and sugar. Thandai is usually linked with the Maha Shivaratri festival or The Night of Shiva, and the Holi festival of colors. Refreshing Thandai can be enjoyed during other occasions.

almonds: 1/4 cup
Poppy seeds: 2 tbsp
fennel seeds: 2 tbsp
ground cardamom: 1/2 tsp
whole white peppercorns: 20
whole milk--boiled and cooled: 4 1/2 cups
powdered sugar: 1/4 cup
ground black pepper: 1 pinch
saffron threads
How To Make Thandai Recipe
- Grind first 5 ingredients into a powder.
- Mix spice powder and milk in a deep bowl with a whisk. Refrigerate for 2 hours.
- Strain the mixture through a strainer. Add the sugar, black pepper and saffron and mix well.
- Serve chilled Thandai in glasses.
