Ingredients

tablespoons of extra virgin olive oil: 2

finely chopped small onion: 1

cloves of garlic, finely chopped: 2

cup of uncooked Arborio rice: 1/2

cup of dry white wine: 1/2

cups of well heated, reduced sodium chicken broth: 2

freshly grounded pepper to add taste

fresh spinach leaves, chopped: 1 cup

tablespoon of butter: 1

cup of well grated Parmigiano-Reggiano cheese: 1/2

cubes of mozzarella cheese weighing: 24

cup of all-purpose flour: 1/2

cup of italian style crispy bread crumbs: 1 1/2

egg: 1

tablespoon of water: 1

vegetable oil to help with frying

How To Make Tasty Spinach Arancini

  1. Line a cookie sheet with a parchment of paper and heat olive oil at medium-high heat.
  2. Add onions and cook for 1 minute.
  3. Add garlic and stir for 5 minutes.
  4. Reduce the heat and add wine and rice.
  5. Stir the concoction and add one cup broth.
  6. Keep stirring until all the broth is absorbed.
  7. Season with pepper, and add Parmigiano cheese and butter.
  8. Spread in on the cookie sheet and refrigerate.
  9. Once refrigerated for 1 and a half hour, cut the mixture into 6 rows by 4.
  10. Make 24 squares and put a mozzarella cheese cube over every square.
  11. Shape the rice around the cheese cubes to make a bowl.
  12. Place bread crumbs and flour in a bowl, and beat egg and water until blended properly. Dip each ball in the flour, egg mixture and bread crumbs, before putting inside fridge for 30 minutes.
  13. Take out pan after 30 minutes and put to fry in vegetable oil.
  14. Fry 8 balls at a time for a period of 3 to 4 minutes. Serve hot.
