There is nothing more classic in the cake world than strawberry cake (except maybe for German chocolate cake, pound cake, sponge cake, red velvet cake, and several others). But strawberries have been used in cake making for a long time now, so the strawberry cake is a natural thing. It is refreshing and makes for a great spring or summer cake. The fresh strawberries add an extra layer of natural sweetness to the cake, making it a top-notch dessert.

Ingredients

3 oz strawberry flavored Jell-O®

1/2 cup cold water

18.25 oz white cake mix

4 eggs

1 cup vegetable oil

3 tbsp all-purpose flour

10 oz frozen strawberries – thawed

6 tbsp butter

2 cups confectioners' sugar

How To Make Strawberry Cake

  • Preheat the oven to 325 °
  • Flour and grease three 9-inch round cake pans.
  • Dissolve the gelatin in cold water in a large bowl.
  • Stir in the flour, vegetable oil, cake mix, eggs, and 1/2 of the strawberries.
  • Beat for 5 minutes using an electric mixer at medium speed.
  • Evenly Divide the between the prepared cake pans.
  • Bake for 30-35 minutes in the preheated oven.
  • Cool cakes in the pans on wire racks.

Frosting

  • Cream the sugar, butter, and the remaining strawberries in a medium bowl until they turn light and fluffy.
    • Add additional confectioners' sugar if needed to ensure a spreadable consistency.
  • Spread the frosting over the top and sides of cake and between layers
