Spicy Vanjaram Varuval

Vanjaram vepadu or vanjaram fish fry recipe is a simple recipe which requires minimal ingredients and can be easily prepared with little time and effort. In this recipe, the fish is first marinated and then cooked, covered, so that fish absorbs the flavors of all the marinating ingredients. Then the fish is uncovered and browned well. Using curry leaves makes the dish tasty and full of aroma.

Ingredients

grams vanjaram fish steak: 200

tsp ginger garlic paste: 1

A pinch ground turmeric

salt to taste

Lemon juice as needed

tsp red chilli powder: 1/2

tsp garam masala powder

: 1/4

Oil or ghee as needed

curry leaves

How To Make Spicy Vanjaram Varuval

  1. Rinse the fish with water. Drain well.
  2. Mix ginger garlic paste, turmeric, salt, lemon juice, red chilli powder and garam masala in a bowl. Add the fish and marinate.
  3. Heat a pan with oil. Add the curry leaves and cook until they turn crispy.
  4. Add fish to the pan. Cover and cook on low heat for 2 to 3 minutes.
  5. Turn the fish carefully, cover and cook for 2 to 3 minutes.
  6. Remove the cover and increase the heat to medium-high. Cook untilthe fish turns golden and the moisture is evaporated. Turn the fish over and cook until golden.
  7. Season to taste with additional red chilli powder and garam masala.
  8. Serve it hot with rice.

Trivia 

Prized for its taste and delicacy, the vanjaram fish is known to be the most expensive fish in India, especially in central and southern India. This species of fish is also called seer fish, king mackerel or Indo-Pacific mackerel. This fast swimming fish has very sharp teeth and it fights very energetically.
