Ingredients

paneer, cut into cubes: ½ kg

green chillies - slit: 2 to 3

coriander leaves, finely chopped: ¾ cup

black pepper corns: 8

ginger, properly chopped: 2 tsp

cloves garlic: 8

black cardamom, shelled: 2

cinnamon powder: ¼ teaspoon

lemon Juice: ¼ cup

normal salt or rock salt (sendha namak): 1 tablespoon

To Garnish: Desiccated coconut

rice flour: 2 cups

urad dal flour: ½ cup

cumin seeds: 1 teaspoon

Sesame seeds: 1 teaspoon

Unsalted butter or Dalda: 3 teaspoon

A pinch of Asaefoetida

oil for frying

salt to taste

How To Make Snack Recipes

  1.  Mix the ground ingredients with lemon juice.
  2. In this masala paste, marinate the paneer for about 30 mins.
  3. Use a griller to grill the paneer or add very little oil to a frying pan that doesn’t stick and fry it.
  4. Your delicious Paneer Hariyali is ready to be eaten. Serve hot and add coconut to garnish.

 

  1. On a low flame, use a large pan with a heavy bottom to roast the urad dal flour until it turns light brown. Urad dal can also be roasted, and then powdered afterwards.
  2. Add the sesame seeds, cumin seeds and rice flour to this.
  3. Add the dalda or butter to the mixture above. Mix it well with the flour. It will be melted by the warmth from your hands.
  4. Add some water to it and mix to create dough. The consistency of the dough must be good enough to pass right through the muruku press. It won’t pass easily if the dough you make is too thick. If it is also too thin, it won’t be able to form a proper shape.
  5. Use a muruku mould or press to make the shape you desire on a plastic sheet that’s been greased. The murukku can be made into different shapes.
  6. Gently remove it from the sheet and use a pan to fry it in hot oil. If you want to get a shape that’s more rusty, you can press the dough directly into the oil, rather than using a mould to make a shape. Fry till it’s color turns to golden brown. Use a paper towel to drain the oil.
  7. Your Mullu Murukku is ready to serve. Store in a container that’s air tight so you can enjoy it for many days.
