Samoan Panikeke

The Samoan panikeke is a relative of the fritter or doughnut. Much like doughnuts, they are prepared by making a batter and cooking globules of that batter inside oil. These are a traditional Samoan fritter and go well with jams, butter, Nutella, and powdered sugar. They can be a dessert, a snack, or even a breakfast food. They’re extremely easy to make so you won’t have any problems getting them to taste just right. Just make sure not to over indulge.

Ingredients

cups all-purpose flour: 3 1/2

cups white sugar: 1 1/3

tsp baking powder: 2

very ripe bananas – mashed: 2

tbsp vanilla extract: 1

cups water: 1 1/2

cups vegetable oil for frying : 6

How To Make Samoan Panikeke

  • Pour the baking powder,sugar, andflour in a bowl and mix thoroughly.
  • Make a smooth sticky dough by stirring in thewater, vanilla extract, and bananas.
  • Heat oil to 350° F in a large saucepan or deep-fryer.
    • Note: The oil should be deep enough to completely cover the panikekes while frying.
    • Note: The oil should be at least 3 in deep.
  • Scoop up a scant 1/4 cup of the batter with a large spoon.
  • Push the batter into the oil using another spoon.
  • Fry in small batches of 4 or 5 until they float to the top and turn golden brown; about 3 minutes.
  • Flip them to fry the other side.
  • Remove from the fryer and let drain on paper towels.
