Ingredients

mutton: 500 g

cup mustard oil: 1/4

pinch asafetida: 1

tsp cumin seed: 1

cinnamon: 2

peppercorns: 5

black cardamom: 2

chilli- red: 2

tsp fennel seed- powdered: 3

tsp ginger powder: 1

tsp coriander powder: 1

cup curd- hung: 3/4

pinch saffron: 1

pinch saffron: 1/4

cup khoya- grated: 1/4

almond paste: 12 g

kewra: 2 m

salt to taste

cup water: 1

How To Make Rogan Josh

  • Heat the mustard oil and add asafetida, cinnamon, cumin seeds, peppercorns, cardamom, and red chili and sauté everything together.
  • Pour the mutton pieces and cook it for 4 minutes before you add the water.
  • Add saffron, fennel seed, ginger, garam masala powder, almond paste, kewra, and mix everything together.
  • Cover the pan and cook for 4 minutes or until the mutton is soft.
  • Add salt, yogurt and cook for 3 more minutes.
  • Garnish with the coriander leaves and serve at once.
