Ridge Gourd Chutney

This chutney is made with onion, spices, and ridge gourd, a ridged, dark green vegetable with a taste similar to zucchini. It is highly delicious served with rice.

Ingredients

oil: 2 tbsp

chana dal (chickpeas): 1 tbsp

(18 oz.) urad dal (split husked black lentils): 1 tbsp

chopped driedred chillies: 4 tsp

cloves garlic: 4

cubed peeled ridge gourd: 3 cups

tamarind paste: 1 tsp

jaggery paste: 1 tsp

salt to taste

Water as needed

Mustard seeds: 1 tsp

curry leaves: 1 tsp

Asafetida: 1 tsp

How To Make Ridge Gourd Chutney

  1. Heat 1 tbsp. of the oil in a pan. Add the chana dal, urad dal, chillies, and garlic. Fry the ingredients well until color changes to golden. Remove from the pan and blend to a paste.
  2. Add the remaining oilto the pan. Add the gourd and cook for about 6 minutes.
  3. Add the chana dal paste, and the tamarind and jaggery pastes. Mix well.
  4. Add the remaining ingredients. Mix them well and continue cooking for about 15 minutes.
  5. Serve it immediately.
