Quinoa Salad

Quinoa salad is an old concept that is back in vogue for good reason. It is easy to make; the ingredients are relatively available. Due to modern research we now recognize quinoa as a superfood. So both your taste buds and your health benefit from eating this dish. Quinoa salad also makes a great lunch meal. You can pack it in a Vaya Tyffyn lunchbox and take it with you wherever you go.

As we already mentioned, quinoa is a superfood. It’s hard to beat these grains for sheer health benefits. Quinoa specifically is one of the most protein rich foods available. This makes it a great supplement for vegetarians and athletic people. With so much protein, muscle recovery won’t be a problem.

This grain also contains twice as much fiber as some other grains, which is great for bowel regulation, and digestive health. Quinoa also contains iron, lysine, magnesium, manganese, and is high in Riboflavin (B2).

Ingredients

water: 12 cups

quinoa: 1 1/2 cups

cucumbers- peeled, trimmed, and cut into small pieces: 5

small red onion: 1

big tomato- sliced: 1

bunch of parsley leaves- chopped: 1

bunches of mint leaves- chopped: 2

olive oil: 1/2 cup

red wine vinegar: 1/4 cup

lemon Juice: 1 tsp

salt to taste

black pepper: ¾ tsp

avocado- peeled: 1

How To Make Quinoa Salad

  1. Boil water in a saucepan. 
  1. Add quinoa, stir it once, and let it boil.

Note: Don’t cover the saucepan while the cooking is going on. 

  1. Strain it and rinse off in cold water.
    1. Shake it well to remove the excess moisture. 
  1. Transfer quinoa to a bowl and add cucumbers, onion, tomato, parsley, mint, vinegar, olive oil, salt, lemon juice, and pepper. 
  1. Toss it well and top with avocado. 
  1. Serve at once.
