How To Make Purple Potato Chips
- Preheat oven to 450° F.
- Wash and peel potatoes.
- Cut into 1/16 in thick slices using a mandoline slicer or sharp knife.
- Place cut potato slices in a large bowl.
- Coat potatoes with olive oil and salt by tossing.
- Arrange slices on a single large rimmed baking sheet.
Note: If you have a wire rack, you can use it to improve air circulation and ensure even cooking.
- Bake at 450° F until chips begin to brown on the edges, about 15-18 minutes.
- Remove from the oven and let cool on a wire rack before serving, about 20 minutes.
Note: If chips are not crispy enough, bake at 450°F for an additional 5 minutes.
