Potato wedges are made using large, unpeeled potatoes which are fried or baked. Potato wedges are very popular in the US as well as some parts of Europe and Asia.

However, you shouldn’t confuse this recipe with that of French fries or steak-cut chips. When potato wedges are done right, they are truly amazing because of the combination of spices used in making it.

Ingredients

baking potatoes, unpeeled: 4

olive oil: 4 tbsp

minced rosemary leaves: 1 tsp

minced garlic: 1 tsp

Freshly ground black pepper: 3/4 tsp

Kosher salt: 1 1/2 tsp

How To Make Potato Wedges

  1. Preheat oven to 400OF.
  2. Scrub the potatoes. Slice them in half vertically, then slice each half in thirds vertically to make 6 long wedges.
  3. In a large sheet pan, toss the potatoes well with theolive oil, rosemary, garlic, pepper, and salt. Spread potatoes in a single layer with one cut-side down.
  4. Bake for about 35 minutes, flipping them to the other cut-side after 20 minutes. Bake until the potatoes turn light-brown, tender on the inside and crisp on the outside.
  5. Your delicious Potato Wedges dish is finally ready. Sprinkle with salt, according to taste. Serve.

  1. Potato wedges are called Jojos in some parts of the US. It is also known as ‘mojos’ in areas such as Western Canada, Yukon (Canada) and the Western US.
  2. Fried potato wedges or ‘Jojo’ is said to originate from Ohio.
