Pesto Lasagna is the only one of its kind as it is a meat less lasagna. If you want to try a different and unique flavor of lasagna this is it! It is very easy and a creamy treat for your taste buds.

This recipe will be using sweet potato and spinach. You can choose anything as a replacement.

Ingredients

basil leaves – a bunch

garlic cloves: 5-7

parmesan cheese: 1 salb

pine nuts: 1/2 cup

tbsp olive oil: 5

sea salt to taste

Butter: 3 tbsp

flour: 3 tbsp

cup milk: 1 1/2

cup grated cheddar cheese: 1/2

water: 4-5 glass

salt to taste

olive oil: 2-3 tbsp

lasagna: 1 packet

boiled and diced sweet potatoes: 2

spinach puree: 1 can

cup grated mozzarella cheese: 1

How To Make Pesto Lasagna

For Pesto

  1. Throw all the ingredients into a blender.
  2. Spin a couple of times and your pesto is ready.
  3. Set it aside until it is needed for the white sauce.

For White Sauce

  1. Heat up a pan and add butter in it.
  2. Melt it at medium heat.
  3. Add flour in the pan and whisk them well until the butter and flour have mixed up.
  4. Add half of the milk into the pan and whisk it as well until it becomes thick.
  5. Add the other half and repeat the same process to get thick texture of the sauce.
  6. Add cheddar cheese into the pan and again whisk it until it has completely dissolved into the sauce.
  7. Add the pesto you had prepared into the sauce and mix it well.
  8. Take it off the heat and set it aside for assembling.

For Lasagna Sheets

  1. Take a deep pot.
  2. Pour water in the pot.
  3. Add salt and oil.
  4. Now bring the water to boil.
  5. Add lasagna sheets in the water and boil until they are left only slightly uncooked.
  6. Take it off the heat, drain the hot water and run it through cold water.
  7. Set aside until it is needed for assembling.

For Assembling

  1. Take a deep baking dish.
  2. Lay down a layer of the white sauce at its very base.
  3. Now lay out layer of lasagna sheet on top.
  4. Apply another layer of the sauce.
  5. Place diced sweet potatoes and the spinach on top of this layer.
  6. Now cover it with another layer of lasagna.
  7. Keep repeating this process until you reach the brim of the dish.
  8. Sprinkle the top with grated mozzarella cheese.
  9. Bake the lasagna at 350 degrees Fahrenheit for 30 minutes.
  10. Serve it hot!
