Peppered Shrimp Alfredo

Ingredients

extra virgin olive oil: 2 tbsp

Butter: 1/4 cup

minced garlic cloves: 2

finely diced red bell pepper: 1

penne pasta: 12 ounces

finely diced mushrooms: 1/2 pound

peeled shrimps: 1 pound

ounce of Alfredo sauce: 15

chopped parsley: 1/4 cup

Salt and pepper to taste

teaspoon of cayenne pepper to taste: 1

freshly grated Romano cheese: 1/2 cup

Cream: 1/2 cup

How To Make Peppered Shrimp Alfredo

  1. In a large pot, add water and salt and bring to a boil.
  2. Add pasta to the boiling water and cook for 10 minutes. Then drain.
  3. While pasta is on the flame, add olive oil with butter in a saucepan and heat at medium flame. Then add onion and stir until it turns soft, for at least 2 minutes. Add garlic, red pepper and mushroom and stir. Let the mixture cook at medium-high flame until soft or for 2 more minutes.
  4. Add shrimpr to the mixure. Stir and cook until it turns pink and crispy.
  5. Pour in alfredo sauce, grated Romano cheese and cream. Let is simmer and keep stirring until it becomes thick. Let it cook for at least 5 minutes.
  6. Add seasoning: salt, pepper and cayenne pepper to taste.
  7. Drain pasta and add it to the sauce.
  8. Sprinkle with chopped parsley. Your dish is ready to serve.

Trivia

Homemade Alfredo tastes much better than store-bought Alfredo.

You could also use shells instead of penne pasta.

If you buy Alfredo from the store, always taste it before serving because mostly store-bought Alfredo contains sufficient amount of salt.

For additional flavors, you could use a combination of green and red bell peppers.

You could also add 1/4th cup freshly grated Parmesan cheese.

The Alfredo sauce that is sold in jar at supermarkets is actually thickened with starch, not cheese.
