Ingredients

tbsp tur dal: 1

tbsp chana dal: 1

tbsp masoor dal: 1

tbsp split green moong dal: 1

tbsp yellow moong dal: 1

cup basmati rice (long grain): 1

water as needed

tsp ginger garlic paste: 1

green chilli chopped: 1

tsp red chilli powder: 1

pinch hing: 1

large onion: 1

tsp tamarind paste/pulp: 1

tbsp oil: 2

curry leaves: 8

tsp mustard seeds: 1/2

tsp jeera: 1/2

green coriander leaves to garnish

How To Make Panchratna Dal Khichdi

  • Wash and soak the dals for 4 hrs.
  • Wash and soak the rice for 1 hr.
  • Slice the onion.
  • Heat oil in a pressure cooker over low heat.
  • Add in the mustard seeds and jeera and cook until they splutter.
  • Add in the onions and sauté them until they turn a golden brown.
  • Add thetamarind paste, curry leaves,hing, turmeric powder, red chili powder, salt, and green chili.
  • Pour in the water, rice, and dals.
  • Put on the lid and cook on high heat for 3 whistles.
  • Reduce the flame and cook for 2 more whistles.
  • Adjust the seasonings again and cook on full flame for 3 whistles.
  • Garnish with green coriander leaves.

Pancharatan means "five jewels", referencing the 5 different lentils used in the khichdi.
