large hard-boiled eggs: 2

paleo mayo: 3/4 cup

yellow mustard: 1 tbsp

salt: 1/2 tsp

pepper: 1/4 tsp

green onion: 1/4 cup

How To Make Paleo – Egg Salad

  • Peel and rinse eggs.
    • Pat dry.
    • Chop into small pieces and place inside large bowl.
  • Add in mayo, mustard, salt, pepper, and green onion.
    • Stir and refrigerate for at least 2 hours.
  • Top with bacon and chives as desired.
