Nankhatai a traditional Indian cookie that you can easily make at home with few ingredients including gram flour, ghee and cardamom powder. These cookies are spicy, crunchy and crumbly. Ingredients
Ghee: 1/2 cup
Sugar: 1/2 cup
yogurt: 100 gm
green cardamom seeds: 30 gm
flour: 100 gm
gram flour: 50 gm
baking powder: 1 tsp
baking soda: 1/2 tsp
salt to taste
How To Make Nankhatai
- Mix ghee with sugar in a food processer until smooth and creamy. Add yogurt and process for few seconds.
- Let stand for 10 minutes and then add some crushed green cardamom seeds and mix them well.
- Add flours, baking powder, baking soda and a pinch salt. Mix until dough comes together.
- Let stand for 1/2 hour or refrigerate for few minutes.
- Preheat the oven to 350°F (180°C).
- Brush some oil on a baking pan. Form dough into25 to 30 balls and place them on the baking pan.
- Bake for 20 to 25 minutes or until light golden. Cool on a wire rack. Store in an airtight container.
