egg: 1

egg whites: 3

tbsp grated Parmesan cheese: 1

tbsp cheddar cheese – shredded: 1

tsp salt: 1/4

tsp red pepper flakes: 1/8

tsp garlic powder: 1/8

tsp ground nutmeg: 1/8

tsp ground black pepper: 1/8

tsp olive oil: 1/2

cup sliced fresh mushrooms: 1/2

cup diced green onion: 1/4

tbsps red bell pepper – finely chopped: 2

cup torn fresh spinach: 1

cup fresh tomato – diced: 1/2

How To Make Mushroom Omelet

  • Beat egg and egg whites in a small bowl.
  • Mix in pepper, nutmeg, garlic, Parmesan cheese, cheddar cheese, salt, and red pepper flakes, garlic powder.
  • Heat oil in a large skillet over medium heat.
    • Cook bell pepper, mushrooms, and green onion until tender, while stirring for about 5 minutes.
  • Place spinach in skillet.
    • Cook until spinach is just wilted.
  • Stir in the egg mixture and diced tomatoes.
    • Lift the edges of the omelet as the eggs set to let the uncooked portion flow underneath.
  • Cook until the egg mixture sets; about 10-15 minutes.
  • Cut into wedges and serve immediately.
