Mushroom Fry

Mushroom fry is a and easy and no-nonsense dish perfect for snacking or to have as a starter. This dish can be prepared using any kind of edible mushroom. This recipe of stir-fried mushrooms is popular in Goan cuisine, but has made its way into international cuisine over the past decade.

Ingredients

mushroom—cleaned, towel-dried, and sliced thin: 1/2 lb

chopped onion: 1

cloves of garlic – minced: 3

green chilies—slit: 3

tsp red chili powder (adjust to taste): 1/4

tsp black pepper (adjust to taste): 1

tsp turmeric powder: 1/4

tsp garam masala: 1/4

salt to season

a bunch of chopped coriander leaves for garnishing

oil: 2 tsp

tsp mustard seeds: 1/2

cumin seeds: ½ tsp

Few sprigs of curry leaves

cup chopped capsicum – optional: 1/4

How To Make Mushroom Fry

  • In a pan over high flame, heat oil. When the oil starts giving out smoke, turn the heat to low and splutter mustard seeds, curry leaves, and cumin seeds.
  • Turn the flame back to medium, and add onion, minced garlic, and slit green chilies. Sauté until the chopped onion becomes translucent.
  • Add mushrooms and reduce the heat; continue frying for 6 minutes.

Note: The idea is to let the moisture in the mushroom dry up.

  • Season with salt, black pepper, chili powder, garam masala, and the turmeric powder. Add in capsicum if you wish.
  • Continue frying till the mixture till the mixture turns brownish.
  • Turn of the flame, garnish with coriander and enjoy your mushroom fry!
