Ingredients

tbsp oil r clarified butter: 1.5

basmati rice – parboiled: 250 g

cinnamon sticks: 2

bay leaves: 2-3

green cardamoms: 2-3

black or brown cardamoms: 2

tbsp caraway seed: 1

cloves: 4-5

peppercorns: 8-10

Star Anise: 1

onion julienne: 2

tbsp biryani masala powder: 1

tbsp red chili powder: 1

tbsp garam masala powder: 1

Turmeric powder: 1 tsp

coriander seed powder: 1 tsp

medium sized potato: 1

mixed sprouts – boiled or cooked until tender: 350 g

a few mint leaves

salt as per taste

cup water: 1

a few fried curry leaves, fried raisins, and cashew nuts for garnish (optional)

chopped tomatoes: 2

carrots—chopped: 2

chopped onion: 1/2

tsp nigella seeds: 1

tbsp charoli: 1

tbsp flax seed: 1

tbsp white sesame seeds: 1

black sesame seeds: 1 tsp

tbsp fresh grated coconut: 2

tbsp poppy seeds: 1

cup chopped coriander leaves: 1

green chili: 1

Mint leaves: 8-9

tbsp water: 2

How To Make Mixed Sprouts Biryani

  1. Strain the water and set the rice aside.
  1. Combine all the ingredients for the paste with a little water.
    1. Grind until a smooth paste is formed.
    2. Set aside.
  2. Add oil or ghee to a pan and place on high heat.
    1. Reduce heat.
    2. Once the pan is hot add caraway seeds, bay leaves, cloves, peppercorns, cardamoms, and star anise.
    3. Sauté until they leave nice aroma.
  3. Add onions.
    1. Sauté until they are dark brown in color.
    2. Add the green paste and sauté until they bubble.
  4. Add all powdered spices like biryani masala, garam masala powder, turmeric, coriander seed powder, and red chili powder.
  5. Add chopped potatoes and give a nice stir.
  6. Add the cooked sprouts and salt for seasoning.
    1. Mix nicely.
    2. Pour a cup of water.
    3. Add parboiled rice and spread over the gravy.
  7. Sprinkle some mint leaves and pour some ghee over it.
  8. Cover with a lid placing a heavy object on it or cook in a pan with a glass lid.
    1. Cook on low heat for 20-25 mins.
    2. Garnish biryani with a few fried curry leaves, fried raisins, and cashew nuts.

Only mammals are affected by capsaicin.
