It also plays a roll in treating and preventing macular degenerative diseases of the eyes. And if you’re having a tough time breathing, carrots have even been proven to help treat respiratory diseases like asthma and bronchitis.

Ingredients

medium carrot – about ½ cup shredded: 1

cups shredded cabbage: 3

cup capsicum – julienned: 1/4

sprigs of spring onions – white & green separated: 2

tsp olive oil: 1-2

tsp soya sauce: 1-2

tsp vinegar: 1

tsp pepper – powdered or crushed: 1/4-1/2

spring roll wrappers: 5-6

cup oil: 1

salt to taste

How To Make Mixed Spring Rolls

  1. Add oil to a hot pan and sauté spring onion whites.
    1. Add all the veggies except onion greens.
    2. Cookat a high temperature until vegetables are half done yet crunchy.
    3. Add soya sauce and vinegar.
    4. Sauté.
    5. Add onion greens, pepper and very little salt.
  2. Spread one wrapper,
    1. place a spoonful of stung.
    2. Roll one edge towards the inner side covering the stung.
    3. Bring the sides to the center.
    4. Dampen the left over edge and roll the wrapper to seal.
    5. Keep them covered.
  3. Heat oil until hot enough.

Note: Check the oil temperature by dropping a small portion of wrapper in the oil. It will rise if the oil is sufficiently hot.

             1.Add the rolls in hot oil and cook evenly by stirring until they turn a golden color.

             2.Drain them on kitchen tissue.
