Ingredients
italian bacon: 1/4 kg
vegetable oil: 1 tbsp
chopped onion: 1 large or 2 small ones
diced celery: 2 ribs
minced garlic cloves: 3
chicken broth: 2 cups
tomato puree: 1 can
Water as needed
cranberry beans/shelling beans: 1 cup
whole diced cabbage: 1/4
tsp red pepper flakes: 2
dry italian herbs: 2 tsp
salt to taste
garbanzo beans/chickpeas: 1 can
swiss chard leaves: 7-8
ditalini pasta: 2/3 cups
How To Make Minestrone Soup
- Take a non-stick deep pan.
- Sauté the bacon into it at low heat until it turns brown.
- Add chopped onions and diced celery until it turns translucent.
- Add minced garlic into the mix and let it all cook for about a minute.
- Add chicken broth, water and tomato puree into the pan.
- Let it all simmer for a few minutes.
- Add cranberry beans and cabbage.
- Spice up this soup with some red pepper flakes, dry Italian herbs and salt.
- Add some canned garbanzo beans to make the soup even heavier.
- Turn the heat to medium low and let the soup simmer for about 45 minutes or until the cranberry beans are tender.
- Until the soup cooks, slice up some Swiss chard leaves, thoroughly washed.
- Keep adding water to the soup if you feel it’s getting too thick.
- As soon as you feel that the beans are finally tender, throw in the Swiss chards into the soup. Stir well and let them cook for another 15 minutes.
- Add more water as the soup thickens as you will need sufficient water to cook the pasta.
- Add more seasoning of salt and pepper into the soup before adding pasta into it.
- Throw in the past and let the soup simmer at medium to high heat. In 15 minutes time the pasta will be cooked.
- Ladle out this amazing big soup into some big bowls and serve it hot!
