This dish makes for a filling brunch, lunch or even dinner and tastes best with curries, stews, raita, or just plain curds. Ingredients
(1 cup = 250 ml)
leftover rice or steamed rice: 2 cups
black mustard seeds: ½ tsp
sprig curry leaves: 1
cumin seeds: ½ tsp
green chili--chopped: 1
medium-sized onion--finely chopped: 1
medium-sized tomato--finely chopped: 1
A pinch of asafetida (optional)
Turmeric powder: ¼ tsp
red chilli powder: ¼ tsp
garam masala powder: ¼ tsp
coriander powder: ½ tsp
fennel powder: ½ tsp
tablespoon oil: 1 or 1.5
Salt as required
Chopped coriander leaves: 2 tbsp
How To Make Masala Rice
- Splutter mustard seeds, curry leaves, and cumin, add onion and sauté until translucent.
- Follow up with chili and stir for about 30 seconds.
- Add chopped tomato and stir until mushy.
- Add all the spice powder and condiments and give the mixture a quick stir.
- Fold in cooked rice and ensure the masala coats the rice evenly.
- Stir for 2 -3 minutes
- Turn of the heat, garnish with coriander leaves, and enjoy!
