Ingredients

of graham cracker crumbs: 1½ cups

Sugar: ½ cup

Melted butter: 6 tbsp

Large ripe mangoes—peeled, pitted and sliced: 3

Cream cheese: 10 – 12 oz

Sugar: 1¼ cups

Vanilla extract: 2 tbsp

Eggs: 4

How To Make Mango Cheesecake Recipe

  1. Preheat oven to 325°F.
  2. Grease the base and sides of a pan of 22½cm in diameter with melted butter.
    Mix cracker crumbs and sugar in a bowl.
  3. Add melted butter to the mixture and stir till the butter spreads evenly
  4. Transfer the mixture onto the pan and press down firmly with a flat-bottomed glass.
  5. Load the pan into a preheated oven and bake the mixture until it’s well set or for about 12 minutes.
  6. Turn off the oven let the crust cool within the oven.
  1. Blend mangoes to a puree.
  2. In a large bowl, add cream cheese, sugar, and vanilla extract and whisk until smooth.
  3. Add eggs into whisked cream, one at a time, and continue whisking until the eggs are completely blended.
  4. Transfer puree into the cream-and-egg mixture and whisk thoroughly.
  5. Transfer filling onto the crust.
  6. Turn on the oven and let the mango cheesecake bakes for about 75 minutes. The cheesecake rises and turns golden brown along the edges. Remove cheesecake from the oven, let cool for an hour, and refrigerate for 4 hours.
  7. Serve slices of delicious mango cheesecake with extra diced mangoes.
